Beans in Salads

Red, White, and Pasta Salad

  1. Combine:
    • 1½ c. (15 oz. can, drained) red beans
    • 1½ c. (15 oz. can, drained) white beans
    • 1½ c. cooked pasta
    • 1 tsp. green onion, finely chopped
    • ½ c. celery, thinly sliced
    • ranch or Italian dressing
  2. Chill; serve on salad greens.

Favorite Chili Rice Salad

  1. Combine:
    • 2 c. cooked brown rice (or ½ brown rice, ½ white rice)
    • 1 c. cooked red beans (drained, most of a can)
    • ½ c. diced celery
    • 2 tbs. chopped onions
    • ½ c. grated cheese
    • ½ tsp. ground cumin
    • 1 tsp. chicken or vegetable bouillon
    • ½ c. mayonnaise
  2. Chill; serve on salad greens and top with chopped tomatoes.

Ranch and Rice Salad

  1. Combine:
    • 2 c. cooked brown rice (or ½ brown rice, ½ white rice)
    • ½ c. cooked white beans
    • 1 green pepper, diced
    • half a cucumber, diced
    • 2 green onions, chopped
    • 1 small can (2.25 oz., drained) or ½ c. chopped olives
    • ¼ c. ranch dressing (or Italian dressing)
  2. Serve on salad greens.
  3. Garnish with 1 red pepper, sliced in thin strips.

Mexi-Bean Rice Salad

This salad is very crunchy.

  1. Combine:
    • 1½ c. (15 oz. can, drained) pinto beans
    • 1 c. cooked brown rice (or ½ brown rice, ½ white rice)
    • 1 c. diced celery
    • 1 green pepper, chopped
    • ¼ t. ground cumin
    • 3 tbs. salsa
    • 2-3 tbs. mayonnaise
    • 1-2 tsp. chicken bouillon
  2. Serve on salad greens or inside pita pockets.

Three-Bean Salad

This recipe makes a lot!

  1. Combine:
    • 1½ c. (15 oz. can) garbanzo beans
    • 1½ c. (15 oz. can) red or kidney beans
    • 1½ c. (14.25 oz. can) green beans
    • 2 tbs. chopped onion
  2. Whisk together:
    • 1 tbs. vinegar
    • 1 tbs. lemon juice
    • ¾ tsp. paprika
    • ½ t. salt
    • 1/8 c. cold water
    • ¼ c. honey
    • 1 tbs. vegetable oil
  3. Mix dressing with beans and chill.

Salsa Beans

  1. Combine:
    • 2 cans (15 oz. each) black beans, drained
    • 2 cans (15.25 oz. each) corn, drained
    • 1 can (10 oz.) Ro-tel tomatoes (don’t drain)
    • 1 small can (2.25 oz.) sliced olives, drained
    • 1 avocado, diced
  2. Chill. Serve with tortilla chips or as a side dish.
    (For a milder flavor, replace Ro-tel tomatoes with fresh tomatoes and 1 envelope Italian dressing mix.)
