Use a wheat grinder to make bean flour. Loosely cover the grinder with a towel to reduce dust in your kitchen.
Baked goods rule of thumb
Substitute bean flour for 25% of flour in a recipe. White beans work well in baked goods because you can’t see them.
Instant soups
Good substitutes for people with wheat or dairy intolerance
- Instant soup: whisk together 2 c. boiling water, 2 tsp. bouillon, and 3-4 tbs. bean flour.
- Soup thickener: blend together ½-1 c. bean flour and 2 c. cooked soup; then whisk bean mixture into 4-6 c. remaining soup.
- Substitute for condensed cream of chicken soup: whisk together 2 c. boiling water, 3 tsp. chicken bouillon, and 6 tbs. white-bean flour.
- If desired, blend bean-flour soups in a blender or with a stick blender to dissolve lumps and to get a creamier texture.
