Coffee Cake

“Wheat-I’m-actually-willing-to-consume” cake?

  1. Mix in blender:
    • 1 c. raisins
    • 1 c. water
  2. Mix dry ingredients:
    • 2 c. wheat flour
    • 2 tsp. cinnamon
    • 1 tsp. baking soda
    • ½ tsp. salt
  3. Add wet ingredients:
    • ½ c. honey
    • 1 egg
    • 1 tsp. vanilla
    • ¼ c. softened margarine (or shortening)
    • raisin and water mixture from blender
    • ½ c. chopped nuts
  4. Pour into a greased 9 in. x 13 in. baking sheet.
  5. Bake at 350° for 15-20 min.
  6. Drizzle frosting over warm cake:
    • ¾ c. powdered sugar
    • a little vanilla
    • a little milk

Let Them Eat Cake!

  1. Mix dry ingredients:
    • 2 c. wheat flour (To avoid a fallen center, use half wheat, half white.)
    • ⅓ c. cornstarch (If using half wheat, half white, then drop the cornstarch.)
    • 1⅓ c. sugar
    • 1 tsp. salt
  2. Add and mix:
    • ¾ c. milk
    • ⅔ c. oil
  3. Add and mix for 2 min.:
    • 3 eggs
    • ½ c. milk
    • 1 tsp. vanilla
  4. Mix in:
    • 3½ tsp. baking powder. (Add last to avoid a fallen center.)
  5. Pour batter into greased, floured pans: two 9 in. rounds, or one 9 in. x 13 in. baking pan, or muffins.
  6. Bake at 350° for 25-30 min., cupcakes for 10-15 min.

Chocolate cake variation

Add ¼ c. baking cocoa to the dry ingredients.

Lindsay’s Pie Crust

Best for savory pies.

  1. Combine dry ingredients:
    • 2 c. minus 1 tbs.wheat flour
    • 2 tbs. cornstarch
    • ½ tsp. salt
  2. Cut in until shortening clumps are penny-sized:
    • 1 c. butter-flavored shortening
  3. Add by the tablespoon until you have a soft dough that holds together:
    • ice water
  4. Divide dough in two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for 10-15 min.
  5. Roll dough out on a floured pastry mat. Carefully transfer rolled dough to pie plate.
  6. For single-crust pies, trim and flute edges.
  7. For double-crust pies, trim edges to size of pie plate. Roll out top crust, fill pie, and cover with top. Trim edges ¼ in. beyond the plate, fold under bottom crust, and flute the edges to seal.

  1. Cream together:
    • 1 c. butter (or shortening)
    • 2 c. brown sugar
    • 2 eggs
    • 1 tsp. vanilla
  2. Add dry ingredients:
    • 1 tsp. salt
    • ¾ tsp. baking powder
    • ¾ tsp. baking soda
    • 2¼ c. wheat flour
    • 2½ c. rolled oats
  3. Mix in:
    • 1 12-oz. bag chocolate chips
    • 1 c. chopped nuts (optional)/li>
  4. Put dough in a greased 11 in. x 13 in. pan. Use a spoon or your fingers to distribute the dough evenly through the pan and to push dough into the corners.
  5. Bake at 350° for 20 min.

Death By Chocolate Brownies

  1. Mix together:
    • ¾ c. baking cocoa
    • ½ tsp. baking soda
    • ⅓ c. oil
    • ½ c. boiling water
  2. Add wet ingredients:
    • ½ c. honey
    • ½ c. brown sugar
    • 2 eggs
    • ⅓ c. oil
    • 1 tsp. vanilla
  3. Add dry ingredients:
    • 1⅓ c. wheat flour
    • ¼ tsp. salt
    • 2 c. chocolate chips
    • ½ c. chopped nuts (optional)
  4. Pour into a greased 9 in. x 13 in. baking pan.
  5. Bake at 350° for 20-30 min.
