Cracked wheat
(Note: When preparing cracked wheat to be used as a meat extender, sift the cracked wheat before cooking it to get a less-mushy effect.)
- Combine in a pot:
- 1 c. cracked wheat
- 2½ c. water
- Bring to a boil.
- Cover and cook on low for 10-20 min.
- Can be stored in the refrigerator for two weeks.
Makes 4 cups.
As a meat extender: use 50% cracked wheat with 50% hamburger.
For added texture: add cracked wheat to tuna salad, egg salad, etc.
To use like rice in fried rice, Spanish rice, pilaf, etc., rinse and drain the cooked cracked wheat before using in a recipe to get a fluffier effect.
