Chunky Potato Soup

A little bitter

  1. Simmer until tender:
    • 8 c. water
    • 1 onion, chopped, or ¼ c. dried onion
    • 4 c. grated potatoes
  2. Add:
    • 1-2 tbs. chicken or vegetable bouillon
    • 1 c. chopped celery, frozen peas, or frozen carrots (optional)
  3. Whisk in:
    • 1/3 c. white-bean flour
  4. Season with:
    • 1 tsp. dried parsley
    • ¼ tsp. dried basil
