- Mix wet ingredients:
- 1½ c. warm water
- 1 tbs. yeast
- ½ c. oil
- 2 eggs, beaten
- Add the dry ingredients:
- ⅓ c. brown sugar
- 1 tsp. salt
- ⅓ c. instant milk
- 3 c. wheat flour
- 2-2½ c. white flour
- Add the flour half a cup at a time, alternating flours. When it gets difficult to stir, turn the mixture onto the counter and mix/knead it with hands.
- Knead the dough for 10-15 min. until it is very elastic.
- Place the dough in an oiled bowl and turn it over to coat well. (Use a bowl that can be placed in the oven on a chilly day.) Cover it with plastic wrap and a towel.
- Let the dough rise for 1 hour. Put it in a warm place: a warm oven, etc.
- Punch down, shape rolls, and place on a greased baking sheet or muffin pan.
- Cover with plastic wrap and a towel. Let the dough rise for 45 min.
- Bake at 375° for 15-20 min. Makes about 18 rolls.
