Cheryl’s Pita

  1. Mix dry ingredients:
    • 2 c. wheat flour
    • 2 tsp. salt
    • 2 tsp. yeast
  2. Add 2 c. very warm water to the flour mixture.
  3. Add 3-4 c. wheat flour, one cup at a time.
  4. Knead the dough until elastic.
  5. Cover with plastic wrap and a towel and allow the dough to rise for 1 hour.
  6. Punch down, cover with a damp towel, and let rest for 30 min.
  7. Divide into 24 parts and roll into 5 inch circles. Use plenty of flour.
  8. Place 4-5 at a time onto an ungreased baking sheet.
  9. Bake at 450° for 5-6 min. Watch them puff!
