Rolls

  1. Mix wet ingredients:
    • 1½ c. warm water
    • 1 tbs. yeast
    • ½ c. oil
    • 2 eggs, beaten
  2. Add the dry ingredients:
    • ⅓ c. brown sugar
    • 1 tsp. salt
    • ⅓ c. instant milk
    • 3 c. wheat flour
    • 2-2½ c. white flour
  3. Add the flour half a cup at a time, alternating flours. When it gets difficult to stir, turn the mixture onto the counter and mix/knead it with hands.
  4. Knead the dough for 10-15 min. until it is very elastic.
  5. Place the dough in an oiled bowl and turn it over to coat well. (Use a bowl that can be placed in the oven on a chilly day.) Cover it with plastic wrap and a towel.
  6. Let the dough rise for 1 hour. Put it in a warm place: a warm oven, etc.
  7. Punch down, shape rolls, and place on a greased baking sheet or muffin pan.
  8. Cover with plastic wrap and a towel. Let the dough rise for 45 min.
  9. Bake at 375° for 15-20 min. Makes about 18 rolls.
