Crust
- Combine:
- 2/3 c. graham cracker crumbs
- 2 tbs. sugar
- 2 tbs. melted butter
- Press onto the bottom of a 7-inch spring form pan or 8-inch pie plate.
Filling
- Beat well at medium speed:
- 2 c. cream cheese
- ½ c. sugar
- 2 tbs. flour
- ½ tsp. lemon juice
- (Optional: ½ tsp. grated lemon rind)
- Add eggs, one at a time, mixing well after each.
- Pour mixture over crust.
- Bake at 400°F for 10 min. Reduce temperature to 250°F and bake for an additional 30-60 min. (The batter is sometimes a little runny when made with homemade cream cheese. It will look more like a custard and will take longer to cook to a firm texture.)
- Cool and run a knife alongside the edge before removing the rim of the spring form pan.
