Magical Cheesecake

Crust

  1. Combine:
    • 2/3 c. graham cracker crumbs
    • 2 tbs. sugar
    • 2 tbs. melted butter
  2. Press onto the bottom of a 7-inch spring form pan or 8-inch pie plate.

Filling

  1. Beat well at medium speed:
    • 2 c. cream cheese
    • ½ c. sugar
    • 2 tbs. flour
    • ½ tsp. lemon juice
    • (Optional: ½ tsp. grated lemon rind)
  2. Add eggs, one at a time, mixing well after each.
    • 2 eggs
  3. Pour mixture over crust.
  4. Bake at 400°F for 10 min. Reduce temperature to 250°F and bake for an additional 30-60 min. (The batter is sometimes a little runny when made with homemade cream cheese. It will look more like a custard and will take longer to cook to a firm texture.)
  5. Cool and run a knife alongside the edge before removing the rim of the spring form pan.
