- Fry and drain:
- 1 lb. ground turkey (or hamburger)
- Add:
- 1 c. salsa
- 1 c. uncooked orzo pasta (or macaroni)
- 2 c. water
- 1 tbs. chopped fresh cilantro (or 1 tsp. ground coriander)
- 1 can (15 oz.) pinto beans, drained
- Heat to boiling.
- Reduce heat; cover and simmer about 15-30 min. until pasta is tender.
- Stir occasionally to avoid sticking. If extra water is needed, add more salsa, too.
