Pork and Black Beans

Dad’s favorite. Try it on top of orzo, a pasta that is shaped like rice.

  1. Combine in a large pot or crockpot:
    • 1 lb. boneless pork, cut in cubes
    • 2 cans (15 oz. each) black beans, drained
    • 1 medium tomato, peeled, seeded, and chopped
    • 1 small red onion, sliced
    • 1 clove garlic, finely chopped
    • ½ tsp. ground cumin
    • 2 tsp. chili powder
    • ½ tsp. salt
    • 1 can (8 oz.) tomato sauce
  2. Cover and cook 1½ hours on low on the stove, or 6-7 hours on high in the crockpot.
  3. About 30 min. before serving, add:
    • 1 red or yellow bell pepper, chopped
  4. Serve on pasta or rice. Garnish, if desired, with:
    • chopped cilantro
    • green onions
