Dad’s favorite. Try it on top of orzo, a pasta that is shaped like rice.
- Combine in a large pot or crockpot:
- 1 lb. boneless pork, cut in cubes
- 2 cans (15 oz. each) black beans, drained
- 1 medium tomato, peeled, seeded, and chopped
- 1 small red onion, sliced
- 1 clove garlic, finely chopped
- ½ tsp. ground cumin
- 2 tsp. chili powder
- ½ tsp. salt
- 1 can (8 oz.) tomato sauce
- Cover and cook 1½ hours on low on the stove, or 6-7 hours on high in the crockpot.
- About 30 min. before serving, add:
- 1 red or yellow bell pepper, chopped
- Serve on pasta or rice. Garnish, if desired, with:
- chopped cilantro
- green onions
