Baja Fajitas

This is a favorite with kids!

  1. Combine:
    • 1 clove garlic, finely chopped
    • ¼ tsp. pepper
    • ¼ tsp. salt
    • 1 tsp. chili powder
    • 1 tbs. prepared mustard
  2. Trim fat and coat meat with mixture
    • 1½ lbs. beef round steak
  3. Cut meat into ½-inch-wide strips and place in a large pot or crockpot.
  4. Mix in a bowl and pour over meat:
    • 1 onion, chopped
    • 1 tsp. beef bouillon
    • 1 c. salsa
  5. Cover and cook 1½ hours on low on the stove, or 6-7 hours on high in the crockpot.
  6. Add:
    • 1 can (15 oz.) small red beans, drained
  7. Cook 30 min.
  8. Serve in tortillas with fajita toppings.
