Quick like cornbread. Makes a very crunchy crust, a little hard to cut.
- Mix together:
- 1½ c. wheat flour
- 1½ c. white flour
- 2 tbs. sugar
- 1½ tsp. salt
- 1 tbs. yeast
- Pour 1¾ c. hot water into the flour mixture.
- Use a spoon to stir until blended.
- Spoon batter into two greased mini-loaf pans or one loaf pan.
- Wet your fingers to smooth the dough and to push the batter into the corners.
- Cover with wax paper and allow to rise for 30 min.
- Bake at 400° for 15 min., then reduce heat to 350° for another 40-45 min.
