Batter Bread

Quick like cornbread. Makes a very crunchy crust, a little hard to cut.

  1. Mix together:
    • 1½ c. wheat flour
    • 1½ c. white flour
    • 2 tbs. sugar
    • 1½ tsp. salt
    • 1 tbs. yeast
  2. Pour 1¾ c. hot water into the flour mixture.
  3. Use a spoon to stir until blended.
  4. Spoon batter into two greased mini-loaf pans or one loaf pan.
  5. Wet your fingers to smooth the dough and to push the batter into the corners.
  6. Cover with wax paper and allow to rise for 30 min.
  7. Bake at 400° for 15 min., then reduce heat to 350° for another 40-45 min.
