- Cover and cook for 30 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot:
- Drain the beans, save the liquid, and blend the beans in a blender or processor.
- When blending the beans, add:
- 1 envelope taco seasoning mix (or cut in half for less spiciness)
- 2 tsp. salt
- 4 tbs. butter
- 1 1/3 c. salsa
- 1 can (4 oz.) chopped green chiles
- 2 c. grated cheddar cheese
- Return the beans to the original pot. Add some of the drained liquid to the beans if needed for desired consistency. Simmer to blend the flavors.
- Sprinkle on the top:
- 1 c. grated cheese
- chopped olives
- chopped green onions
- Cover and heat until the cheese has melted.
- Serve with tortilla chips.
