Basic Bean Recipe

For lentils, split peas, white beans, etc.

  1. (Marilyn’s secret) Saute until slightly caramelized:
    • 1-2 cloves garlic, finely chopped
    • 1 onion, chopped
    • 2 tbs. olive oil
  2. Add:
    • desired dried legume—lentils (red, green), split peas (green, yellow), beans, etc.
    • desired flavor base—bay leaves, chicken carcass, turkey carcass, ham bone, bacon, salt pork, bouillon, etc.
  3. Cover with water (or broth), and simmer until almost tender.
  4. Add desired vegetables—celery, carrots, potatoes, etc. and simmer until tender.
  5. Season to taste with salt, pepper, Italian seasoning, etc.
