For lentils, split peas, white beans, etc.
- (Marilyn’s secret) Saute until slightly caramelized:
- 1-2 cloves garlic, finely chopped
- 1 onion, chopped
- 2 tbs. olive oil
- Add:
- desired dried legume—lentils (red, green), split peas (green, yellow), beans, etc.
- desired flavor base—bay leaves, chicken carcass, turkey carcass, ham bone, bacon, salt pork, bouillon, etc.
- Cover with water (or broth), and simmer until almost tender.
- Add desired vegetables—celery, carrots, potatoes, etc. and simmer until tender.
- Season to taste with salt, pepper, Italian seasoning, etc.
