Gourmet Refried Beans

  1. Cover and cook for 30 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot:
    • 3 c. pinto beans
  2. Drain the beans, save the liquid, and blend the beans in a blender or processor.
  3. When blending the beans, add:
    • 1 envelope taco seasoning mix (or cut in half for less spiciness)
    • 2 tsp. salt
    • 4 tbs. butter
    • 1 1/3 c. salsa
    • 1 can (4 oz.) chopped green chiles
    • 2 c. grated cheddar cheese
  4. Return the beans to the original pot. Add some of the drained liquid to the beans if needed for desired consistency. Simmer to blend the flavors.
  5. Sprinkle on the top:
    • 1 c. grated cheese
    • chopped olives
    • chopped green onions
  6. Cover and heat until the cheese has melted.
  7. Serve with tortilla chips.
