- Saute until slightly caramelized:
- 2 cloves garlic, finely chopped
- 1 onion, chopped
- 2 tbs. oil
- Combine in a large pot or crockpot:
- onion and garlic mixture
- 2 c. dried pinto beans
- 4 c. beef broth
- ¼ lb. salt pork, cut into cubes
- 1 lb. beef chuck steak, cut into cubes
- ½ tsp. crushed dried red pepper
- 1 can (6 oz.) tomato paste
- 1½ tbs. chili powder
- 1 tsp. salt
- 1 tsp. whole cumin
- ½ tsp. marjoram
- Cover and cook 30 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
- Serve with grated cheese and tortilla chips. Good on top of rice.
