Beef Chuck and Beans

  1. Saute until slightly caramelized:
    • 2 cloves garlic, finely chopped
    • 1 onion, chopped
    • 2 tbs. oil
  2. Combine in a large pot or crockpot:
    • onion and garlic mixture
    • 2 c. dried pinto beans
    • 4 c. beef broth
    • ¼ lb. salt pork, cut into cubes
    • 1 lb. beef chuck steak, cut into cubes
    • ½ tsp. crushed dried red pepper
    • 1 can (6 oz.) tomato paste
    • 1½ tbs. chili powder
    • 1 tsp. salt
    • 1 tsp. whole cumin
    • ½ tsp. marjoram
  3. Cover and cook 30 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
  4. Serve with grated cheese and tortilla chips. Good on top of rice.
