Refried Black Beans

  1. Saute until slightly caramelized:
    • 1-2 cloves garlic, finely chopped
    • 1 onion, chopped
    • 2 tbs. oil
  2. Combine in a large pot or crockpot:
    • onion and garlic mixture
    • 2 c. dried black beans
    • 6 c. water
  3. Cover and cook 30 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
  4. Drain the beans, save the liquid, and blend the beans in a blender or processor.
  5. When blending the beans, add:
    • 2 tsp. chili powder
    • ½ tsp. ground cumin
    • ½ tsp. salt
    • 2 tbs. chopped fresh cilantro
  6. Return the beans to the original pot. Add some of the drained liquid to the beans if needed for desired consistency. Simmer to blend the flavors.
  7. Sprinkle chopped tomatoes, and chopped green onions on the top.
  8. Serve with tortilla chips.
