- Combine in a large pot or crockpot:
- 2 c. dried white beans
- water to cover beans
- 1 onion, chopped
- 1 tbs. chili powder
- 1½ tsp. salt
- 2 cloves garlic, finely chopped
- Cover and cook 20 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
- Add and bring to a boil:
- 1 can (28 oz.) tomatoes
- 1 can (4 oz.) chopped green chiles
- 1½ c. uncooked small pasta shells
- Simmer about 15 min. until pasta is tender.
- Top with:
- 1 c. grated mozzarella
- ½ c. sliced green onions
