Chili Beans and Shells

  1. Combine in a large pot or crockpot:
    • 2 c. dried white beans
    • water to cover beans
    • 1 onion, chopped
    • 1 tbs. chili powder
    • 1½ tsp. salt
    • 2 cloves garlic, finely chopped
  2. Cover and cook 20 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
  3. Add and bring to a boil:
    • 1 can (28 oz.) tomatoes
    • 1 can (4 oz.) chopped green chiles
    • 1½ c. uncooked small pasta shells
  4. Simmer about 15 min. until pasta is tender.
  5. Top with:
    • 1 c. grated mozzarella
    • ½ c. sliced green onions
