- Saute until slightly caramelized:
- 1 clove garlic, finely chopped
- 1 onion, chopped
- 2 tbs. oil
- Combine in a large pot or crockpot:
- onion and garlic mixture
- 2 c. dried small red or pinto beans
- 2 cans (14.5 oz each) chicken broth
- ½ lb. smoked cocktail sausage links
- 2 tbs. fresh parsley (1 tbs. dried)
- ½ tsp. salt
- 1/8 tsp. pepper
- Cover and cook 25 min. in a pressure cooker, 3 hours on the stove, or 6-7 hours on high in the crockpot.
- About 30 min. before serving, add:
- 1 c. whole-kernel corn
- 1 green or red bell pepper, chopped
- Optional: peeled, cubed potatoes
