Confetti Beans

  1. Saute until slightly caramelized:
    • 1 clove garlic, finely chopped
    • 1 onion, chopped
    • 2 tbs. oil
  2. Combine in a large pot or crockpot:
    • onion and garlic mixture
    • 2 c. dried small red or pinto beans
    • 2 cans (14.5 oz each) chicken broth
    • ½ lb. smoked cocktail sausage links
    • 2 tbs. fresh parsley (1 tbs. dried)
    • ½ tsp. salt
    • 1/8 tsp. pepper
  3. Cover and cook 25 min. in a pressure cooker, 3 hours on the stove, or 6-7 hours on high in the crockpot.
  4. About 30 min. before serving, add:
    • 1 c. whole-kernel corn
    • 1 green or red bell pepper, chopped
    • Optional: peeled, cubed potatoes
