Sausage and Lentils

  1. Fry until sausage is browned:
    • 2 cloves garlic, finely chopped
    • 1 onion, chopped
    • 4 ounces ground sausage (Italian or regular)
    • 2 tbs. oil
  2. Add:
    • 4 c. chicken broth
    • 1 c. dried lentils (Red lentils are my favorite.)
    • 1 tbs. Worcestershire sauce
    • ¼ tsp. oregano
    • ¼ tsp. pepper
    • 1/8 tsp. ground cumin
    • 1 bay leaf
  3. Bring to a boil, cover, and simmer for 15 min.
  4. Add:
    • 1 c. canned tomatoes (Italian-style or regular)
    • 1 medium carrot, sliced
    • 1 stalk celery, chopped
    • 1 c. spinach, chopped
  5. Bring to a boil, cover, and simmer for 20 min. until the vegetables are tender.
  6. This soup tends to get too thick and spicy. Add water to get the desired consistency and flavor.
  7. Eat as a soup or served on top of couscous or rice.
