Pizza Beans

  1. Saute until slightly caramelized:
    • 1-2 cloves garlic, finely chopped
    • 1 onion, chopped
    • 2 tbs. oil
  2. Combine in a large pot or crockpot:
    • onion and garlic mixture
    • 2 c. dried white beans
    • 3½ c. water
    • 1 tsp. salt
    • ½-1 tsp. oregano
    • ¼-½ tsp. rosemary
  3. Cover and cook 20 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
  4. Add and simmer to blend flavors:
    • 1 can (28 oz.) tomatoes
    • ¼ c. chopped green pepper
  5. If desired, add other pizza toppings, such as chopped ham, chopped pepperoni, sliced olives, etc.
  6. Top with:
    • 1 c. grated mozzarella
