- Saute until slightly caramelized:
- 1-2 cloves garlic, finely chopped
- 1 onion, chopped
- 2 tbs. oil
- Combine in a large pot or crockpot:
- onion and garlic mixture
- 2 c. dried black beans
- 6 c. water
- Cover and cook 30 min. in a pressure cooker, 2-3 hours on the stove, or 6-7 hours on high in the crockpot.
- Drain the beans, save the liquid, and blend the beans in a blender or processor.
- When blending the beans, add:
- 2 tsp. chili powder
- ½ tsp. ground cumin
- ½ tsp. salt
- 2 tbs. chopped fresh cilantro
- Return the beans to the original pot. Add some of the drained liquid to the beans if needed for desired consistency. Simmer to blend the flavors.
- Sprinkle chopped tomatoes, and chopped green onions on the top.
- Serve with tortilla chips.
