- Fry until sausage is browned:
- 2 cloves garlic, finely chopped
- 1 onion, chopped
- 4 ounces ground sausage (Italian or regular)
- 2 tbs. oil
- Add:
- 4 c. chicken broth
- 1 c. dried lentils (Red lentils are my favorite.)
- 1 tbs. Worcestershire sauce
- ¼ tsp. oregano
- ¼ tsp. pepper
- 1/8 tsp. ground cumin
- 1 bay leaf
- Bring to a boil, cover, and simmer for 15 min.
- Add:
- 1 c. canned tomatoes (Italian-style or regular)
- 1 medium carrot, sliced
- 1 stalk celery, chopped
- 1 c. spinach, chopped
- Bring to a boil, cover, and simmer for 20 min. until the vegetables are tender.
- This soup tends to get too thick and spicy. Add water to get the desired consistency and flavor.
- Eat as a soup or served on top of couscous or rice.
